The hydrolate of Immortelle, in detail
A flower that never fades: Immortelle or Italian Helichrysum.
Its name, derived from Greek helios (sun) and chrysos (gold), evokes its golden flowers that retain their luster even once picked, nourishing many popular beliefs.
Very present on the dry and sunny soils of the Mediterranean region, it is easily recognizable by its small yellow flowers that retain their luster even when dried, hence its name 'Immortelle'.
For a long time, its flowers have been harvested to be dried and used in scented compositions, bouquets, or decorative objects, appreciated for their longevity.
In Mediterranean folklore, the Immortelle flower is often associated with memory and longevity. It is a symbol of protection or remembrance.

Complete distillation in a low-pressure still (with organoleptic monitoring conducted by Gaël) using steam distillation.
