In infusion, lemon balm reveals a fresh, herbal, and slightly lemony taste, perfect for a gentle and soothing break. It is gladly enjoyed after a meal or in the evening, alone or combined with other plants like verbena, fine lavender, or mint.

In cooking, it adds a fresh and aromatic touch to desserts, fruit salads, homemade syrups, flavored waters, sauces, marinades, or summer dishes.

Lemon Balm herbal tea, in detail

Lemon balm is an aromatic plant appreciated for its fresh, herbal, and slightly lemony scent.

When you crush its leaves between your fingers, it releases a fresh, green, and lemony fragrance, very different from that of citrus: more herbal, sweeter, almost honeyed.

In infusion, it gives a light and pleasant herbal tea, without bitterness, that is easily appreciated on a daily basis. Its natural lemony taste makes it an ideal plant for a break after a meal, an evening drink, or a refreshing infusion to enjoy in the summer.

Its name comes from the Greek “melissa”, which means “bee”. A lovely reference for this honey-producing plant, highly appreciated by pollinators when it is in bloom. It also reminds us of the importance of cultivating plants that are beneficial for us, for the fields, and for biodiversity.

In the kitchen, lemon balm adds a fresh touch to homemade recipes. It can flavor a fruit salad, a cream, a syrup, infused water, a light sauce, or even a marinade. Its scent being more delicate than that of lavender, it can be used with a bit more flexibility, adjusting according to the desired taste.

Tea:

Tea contains caffeine and comes from the infusion of tea leaves.

Herbal tea:

Herbal tea, on the other hand, is made up of natural plant extracts such as flowers, roots, seeds, and leaves.

Infusion: 
Infusion is a technique for preparing herbal teas. Hot water is poured over a plant, flowers, leaves, fruits, or spices, and then allowed to steep for a few minutes.

Place a small pinch of fine lavender flowers in a cup, then pour in hot water, but not boiling water, ideally around 85 to 90 °C. Let it steep for 5 to 8 minutes, depending on the desired strength, then strain before drinking.

Lemon balm offers a naturally sweet, herbal, and slightly lemony scent. You can start with a small amount and then adjust to your taste. It is very enjoyable on its own, for a fresh and soothing infusion, or combined with other plants like verbena, mint, chamomile, or fine lavender.

Gourmet tip : add a spoonful of spring honey to sweeten the infusion and complement its fresh and lemony notes.
