Savory essential oil, in detail
Savory, a herb with character.
Savory is a very interesting plant due to its powerful aroma:
Savory (Satureja montana for the perennial, Satureja hortensis For the annual) is a typical plant of dry limestone soils, often found naturally in the garrigues of southern France.
Unlike other, milder aromatics, it is distinguished by a high concentration of aromatic compounds that give it a very pronounced peppery character. It is one of the "Herbes de Provence"
Historically, it is strongly associated with peasant cuisines, particularly to accompany legumes such as beans or broad beans, where it adds depth to simple dishes.
